    近日,亚太区首家JDV品牌酒店首北兆龙饭店官宣,其自营餐饮空间——BEI Commune正式上新中式菜肴。将“中式小馆儿”理念与美式、意式菜肴珠联璧合,推出无国界风格的餐饮美食空间。

    首北兆龙饭店BEI Commune厨师长李明然师傅,是土生土长的北京人,经过20余年中餐烹饪的研习与时间的洗礼,他把制作中式美食的热爱和对北京故土文化的依恋,深深地融入到创新菜肴中。中式佳肴不仅是一种色香味俱全的呈现,更是对精妙厨艺的考验,在师从著名北方菜大师——金强师傅期间,不仅让他历练出了过硬的厨艺、积累了大量的实战经验,更让他深谙中餐料理之道。此次,李明然主厨本着“寻味本土”的初心,精选出4道地道中式佳肴做为上新开篇,以匠心赋予中式料理魅力,每一餐,都是格调生活的缩影。

    做为特色开胃菜的黑松露菌香辣仔鸡,甄选优质的三黄鸡鸡腿肉,近似白切的烹煮方式完全保留了鸡肉的鲜美,加入自制虎皮小米辣椒酱,让辣椒酱侵入每一寸嫩滑鸡肉,使肉质变得香辣十足、爽口入味,再缀以黑松露,瞬间治愈夏天的食欲不振,又无上火之虞,细节之处可见匠心。

    做为热菜特色推荐菜之一的酸甜口鲜果松鼠桂花鱼,李师傅基于经典中式菜肴“松鼠桂花鱼”传统做法上独辟蹊径,加入了大量新鲜水果,以鲜柠檬汁代替白醋,再以水果来控制鱼的甜度,鲜甘脂道,融于一味,无不让齿间流连于酸甜的冲击之中。

    热菜特色推荐菜之二的鸽蛋红烧两头乌,看似平凡的摆盘,却有着不平凡的营养价值,用以人称“动物人参”的高蛋白低脂肪珍品鸽蛋,配以精选优良品种猪肉,以传统上海菜肴的烹饪手法,烧制出肥瘦得当,入口即化的一流红烧肉,鸽蛋的细嫩可口,老少皆宜,成为菜单中的一道时尚菜品。

    做为主食特色推荐的腊味炒窝头可谓是一款升级版的家常菜,外酥里嫩的窝头包裹着腊肉的丝丝香味,再撒入若干韭菜,提色又提味,是整道菜的点睛之笔,色彩艳丽的食材,跃于舌尖,碰撞出了一幅耀眼的味蕾之作。

    Recently, the BEI Zhaolong Hotel, a Joie de Vivre hotel, the first JDV branded hotel in the Asia-Pacific region, officially announced that its own restaurant space, BEI Commune, has officially launched signature new Chinese dishes. The concept of "Chinese Bistro" is combined with American and Italian dishes in order to launch a borderless dining space.

    The introduction of the Chinese soul into BEI Commune dining space has created new boundaries of a new tasting experience in Sanlitun area, making BEI Commune as a dining space full of different elements. The new Chinese cuisine draws the essence and inspiration of each Chinese region, adding the real and authentic taste symbol of gorgeous food culture.

    Chef de Cuisine of BEI Commune, Mr. Nickson Li, is a native of Beijing. With 20 years long experience in Chinese cuisine, his attachment to Beijing’s native culture and Chinese cuisine are deeply. Chinese food is not only a presentation of different colors and flavors but also a demonstration of exquisite cooking skills. During the period of learning from the famous Northern cuisine Chef, Mr. Jin Qiang, he gained acquired excellent cooking skills and accumulated experience that made him more familiar with Chinese cuisine. During this time, chef Li selected 4 authentic Chinese dishes as a new beginning for the local taste and enriching the Chinese cuisine with charm and innovation. Every meal is a microcosm with delicious special dishes in BEI Commune.

    The spicy chicken with black truffle as a special appetizer, the selected high-quality three-yellow chicken sticks, and the cooking method of the cut completely preserve the deliciousness of the chicken. The addition of the homemade millet chili sauce makes the meat spicy and refreshing. It is the perfect solution to summer's loss of appetite.
    One of the special hot dish sweet and sour fish with fresh fruit is a special creation of Chef Li: a unique recipe based on the traditional Chinese dishes of the Osmanthus fish, with the addition of fresh fruit and white vinegar to control the sweetness of the fish. A new connection between sweet and sour.
    Another special hot dish braised pork belly in soya and vinegar sauce with pigeon egg has specific nutritional value. They are characterized by high-protein and low-fat components; for this reason, they are known as "animal ginseng". They are selected with excellent varieties of pork and cooked in the traditional Shanghai cuisine style. This special technique makes this recipe suitable for all ages, and our most fashionable dish on the menu.
    The special principal food wok fried corn bread with preserved pork and chives is an upgraded version of home cooking, where tenderness and crisp are wrapped in the silky fragrance of bacon, enhancing both color and taste. The perfect touch to complete the dish in a colorful way.
